The head chef of Ristorante Loren on how local sourcing, special activations and the narrative behind each plate sets the restaurant apart

Just two years after opening, Italian venue Ristorante Loren, has made its mark in Dubai’s culinary scene, recently winning ‘Best Traditional Pasta’ from the Italian Business Council in Dubai.

The restaurant, located on Palm Jumeirah, also bagged a spot in the Gault&Millau 2024 UAE Guide.

At the helm of the restaurant’s success is head chef Giovanni Cortese who was previously with Roberto’s DIFC.

In conversation with Caterer, Cortese shares how local sourcing, special activations and the narrative behind each plate help set the newcomer apart from other competitors in the region.

“Dubai is a city that never stops; people come and go from all around the world, making it a challenge to keep things fresh,” he shares. With Italian food being one of the most globally loved cuisines, you might assume that would be enough to draw diners in.

But Cortese insists it’s the narrative behind each plate that sets Loren apart. “Every dish carries with it a personal or cultural story, whether it’s an echo of his own culinary journey or a nod to Italian legends. This storytelling is woven into every bite, making the experience at Loren truly unique.”
